For buyers building a 2026/27 sourcing plan in Vietnam, knowing which method a mill runs is as important as knowing the region, because it drives flavor, moisture stability, lead time, and price.
Natural (dry) process — the Vietnamese default
Natural, or dry, processing is the most widely used method in Vietnam and the historical backbone of the country's robusta industry. Whole cherries are spread on patios or raised beds and sun-dried with the fruit still intact, then hulled once moisture drops to export levels. Because the mucilage and skin stay on the bean throughout drying, natural processing produces a heavy-bodied, low-acid cup with pronounced sweetness — sometimes with fruity or fermented notes when drying is well controlled, or musty, over-fermented defects when it isn't. It's the fastest and lowest-cost method to run at scale, which is why it dominates Central Highlands robusta production.
Washed process — the specialty-arabica standard
Washed (wet) processing strips the mesocarp before drying: cherries are pulped, fermented to break down the remaining mucilage, washed clean, and then dried as parchment. This is the method most associated with Lam Dong's specialty arabica around Da Lat and Cau Dat. Washed coffee typically cups cleaner and brighter, with more defined acidity and clarity of origin character, which is exactly what export-grade specialty buyers are cupping for. It requires more water, more processing infrastructure, and tighter fermentation control than natural — mills that can run washed lots consistently tend to be the more serious specialty suppliers.
Honey process — the labor-intensive middle ground
Honey processing (also called pulped natural) pulps the cherry like a washed lot but dries it with some or all of the sticky mucilage layer still on the parchment. Depending on how much mucilage is left, mills grade the result as yellow, red, or black honey — more retained mucilage means longer drying and a bigger, sweeter cup. Drying can take anywhere from about four days to several weeks depending on grade and weather, and beds need frequent raking to prevent the sugary parchment from fermenting unevenly or sticking together. Done well, honey process splits the difference between washed and natural: the clarity of a washed cup with the body and sweetness of a natural. It's more labor-intensive than either, which keeps it a premium, lower-volume option concentrated among Lam Dong's specialty-focused mills.
Wet-hulled — a Vietnamese variant worth knowing
Best known from Sumatra, wet-hulling also shows up in parts of Vietnam, including Rainforest Alliance-certified robusta programs in Lam Dong. Cherries are pulped and dry-fermented in tanks for up to around 14 hours, washed, and pre-dried on vibrating dryers to a still-high moisture parchment before hulling — earlier and wetter than washed or natural processing allows. The naked beans then finish drying on raised beds, often under greenhouse cover, for up to about a week. The early hulling changes how the bean dries and typically produces a heavier-bodied, lower-acid, sometimes earthy cup — a distinct flavor signature buyers can use to diversify a robusta program beyond standard natural-processed lots.

What to ask suppliers
Before committing to a lot, buyers should ask for the processing method by name, the drying surface used (raised bed, patio, or mechanical dryer), fermentation time and vessel, and moisture content at the time of export — Vietnam's export standard generally targets moisture in the 12.5% range, tightening for certified specialty lots. Ask whether lots are separated by processing method at the mill or blended before hulling; single-process lot separation is a strong signal of a supplier set up for specialty buyers rather than commodity volume.
